INGREDIENTS (4 people):- 1 turkey of 7 kg
- 2 lemons
- Olive oil
- Black pepper.
For the glaze:
- 2.5 dl of honey
- 115 g of butter
- 2 teaspoons dried sage leaves
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried basil
- 1 teaspoon salt
Preheat the oven at 160º C. Mix in a bowl half a tablespoon of freshly ground black pepper; half a cup of olive oil; a spoonful of salt; another one of fresh thyme and the zest of 2 lemons.
Place the turkey on a baking sheet, and spread completely with the herb mixture. Tie the turkey with kitchen thread and bake 2 hours.
Melt the butter In a small pot. Add honey, sage, parsley, a tablespoon of salt and one of pepper. Cook 10 min. over low heat until a smooth and homogeneous mixture is obtained; Reserve.
Remove the turkey from the oven. Varnish it with the glaze and bake 2 more hours. Every 30 minutes, remove and varnish again. Remove when well browned.
When you take the turkey out of the oven, cover it with aluminum foil and let it stand for 30 minutes before cutting it.
